Aunt Netta's Butter Horns

Pastry:

2 Cups Flour     -     1/2 lb "cold" butter     -     3/4 Cup sour cream     -     2 egg yokes

Filling:

3/4 Cup sugar     -     1 teaspoon cinnamon     -    1 Cups chopped pecans or walnuts

 

With fingers OR a heavy duty mixer, mix flour and butter.  You want the the mixture to resemble very, very course corn meal.  Your gold is to make a flaky pastry so don't over do on the mixing.

In a separate bowl combine, sour cream and eggs.  Mix thoroughly.  Add to flour mixture, be sure to keep butter in those tiny pieces so once again, don't over mix.  The dough will be quite sticky, form it into a ball and place in a floured bowl, covered with plastic wrap and chill for at least 8 hours or better yet, over night.

After chilling the dough, cut the ball into 4 equal pieces.  Take one of the pieces and form/roll it into a large round disk,  about 1/8 of an inch thick.   Cut the round into 12 triangles.  Sprinkle on the filling, don't add too much it will burn, and roll each triangle starting from the widest part.  Your forming a "crescent" roll basically.  Place on an un-greased cookie sheet, bake at 375 degs for 25 - 30 minutes.

Since all ovens vary, please keep an eye on the horns, they burn quickly.  They should be a nice golden brown.  Place on a cooling rack and sprinkle with powered sugar once cooled.

This is not in anyway a low fat food.  In moderation, they are a very special treat.
